Material:

  • Single beef tenderloin 4 kg
  • 6 ground lemongrass sprigs
  • Bay leaves 9 pcs
  • 15 orange leaves
  • Brown sugar 130 grams
  • 1.5 liters instant coconut milk
  • Air 1,5 litres
  • Salt 2 tablespoons
  • Mushroom relish or broth 2 tbsp

Ground spices ingredients:

  • Red hot pepper, cut into 350 grams
  • Garlic 36 cloves
  • Red onion 30 cloves
  • 30 ground walnuts
  • Ginger 40 grams
  • Galangal 60 grams
  • White peppercorns 1 tablespoon
  • Coriander 3 tablespoons
  • Oil 300 ml
  • Water 125 ml

How to make:

  • Cut the ginger and galangal into slices, then grind them with garlic, walnuts, coriander, oil, and white pepper. Add water and blend until smooth.
  • Mix shallots, chili pepper, oil and water.
  • Add the ground spices to the pan.
  • Fry the ground spices until fragrant over low heat and don’t forget to stir occasionally.
  • Prepare slightly large pieces of beef.
  • After the ground spices release the oil, add the lemon leaves, bay leaves and lemon grass.
